Quick and Easy Pesto Pasta

Pesto is a quick and flavorful sauce that only takes 15 minutes to make. If you're looking to impress your friends or just make something delicious then make yourself some pesto

Pesto (serves 4)


Ingredients:

  • 2 cups fresh basil leaves, packed

  • 1/2 cup pine nuts

  • 2 cloves garlic, minced

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup olive oil

  • Salt and pepper to taste

Directions:

  1. In a food processor or blender, pulse the basil, pine nuts, and garlic until finely chopped.

  2. Add the Parmesan cheese, and pulse to combine.

  3. With the motor running, slowly pour in the olive oil, and blend until the mixture is smooth and creamy.

  4. Season with salt and pepper to taste.

  5. Toss the pesto with your favorite pasta, and serve immediately.

Notes:

  • pesto doesn't have to be made from basil and pine nuts, feel free to experiment with other nuts like cashews or walnut and leafy greens like kale or parsley.

  • this pesto goes great on sandwiches and pizzas as well.

  • If you feel like you've made too much or don't want to use it right away you can add a little lemon juice to keep the form turning brown or even freeze it and save it for another day. (the lemon juice will change the flavor rather dramatically so use it with caution).
